Cucumber Soup Recipe
Try this refreshing, cool cucumber soup with yogurt.
3 large cucumbers
1 ½ cups plus 2-3 tablespoons plain low-fat yogurt
½ cup cold water
1 small bunch of fresh spearmint
Salt & pepper
Peel cucumbers. Cut in half lengthwise and use a small spoon to scoop out the seeds. Cut cucumbers into ½ inch pieces and place in blender.
Add ½ cup cold water and 1 cup yogurt and blend until smooth.
Add ½ cup yogurt and 3 tablespoons chopped spearmint. Add salt and pepper to taste. Blend again until smooth.
Chill until very cold (you could place in freezer for 20 minutes before serving).
Serve with a dollop of the remaining yogurt and small spearmint sprigs .
Serves 4 (makes about 4 cups).
